In this week’s meal plan you will notice that there is more meat (beef) for the weekend than I usually include. This is for those that might be BBQ-ing for the holiday and serving a small crowd. If meat is too expensive or hard to find, you can swap it for chicken or fish. You can also check my recipes under the July 4th holiday tab. I have also included interchangeable meals for both Saturday and Sunday lunch and dinner meals so you can pick and choose or move things around to work for your schedule. Have a safe and happy 4th!
Why Should Everyone Meal Plan?Meal planning is a great way to organize your meals for the week ahead. You also save time and money in the supermarket! And of course, planning ahead helps you stick to your goals! About The Meal PlanIf you’re new to my meal plans, I’ve been sharing these free, 7-day flexible healthy meal plans (you can see my previous meal plans here) that are meant as a guide, with plenty of wiggle room for you to add more food, coffee, beverages, fruits, snacks, dessert, wine, etc or swap recipes out for meals you prefer, you can search for recipes by course in the index. You should aim for around 1500 calories* per day. There’s also a precise, organized grocery list that will make grocery shopping so much easier and much less stressful. Save you money and time. You’ll dine out less often, waste less food and you’ll have everything you need on hand to help keep you on track. THE DETAILS:Breakfast and lunch Monday-Friday, are designed to serve 1 while dinners and all meals on Saturday and Sunday are designed to serve a family of 4. Some recipes make enough leftovers for two nights or lunch the next day. While we truly believe there is no one size fits all meal plan, we did our best to come up with something that appeals to a wide range of individuals. Everything is Weight Watchers friendly, I included the updated WW Blue SP for your convenience, feel free to swap out any recipes you wish or just use this for inspiration! The grocery list is comprehensive and includes everything you need to make all meals on the plan. I’ve even included brand recommendations of products I love and use often. Cross check your cabinets because many condiments you’ll notice I use often, so you may already have a lot of them. And last, but certainly not least, this meal plan is flexible and realistic. There’s plenty of wiggle room for cocktails, healthy snacks, dessert and dinner out. And if necessary, you can move some things around to make it work with your schedule. 5 Freezer-Friendly Make and Save Meals

If you ask me, one of my favorite childhood memories is my mother’s kebabs (or kabobs), cooked over the little cast iron hibachi grill my parents had on the back porch. My most vivid memory of them was the time I was recovering from pneumonia, hadn’t eaten anything for 3 weeks, and was allowed for the first time to sip some broth. And sip I did while the rest of the family ate beautiful, smoky, meaty, hearty, beefy kebabs. It. Was. So. Unfair. I can still smell them now. There was nothing I wanted more in the world at that moment than those kebabs. Sigh. Funny, the emotional ties we can have with food, isn’t it? VIDEO! How to Make Beef KebabsMake-Your-Own Beef KebabsI love, really truly love beef kebabs. Why? They’re fun, they’re on a stick. You can make your own, just they way you want them (lots of mushrooms please). If you’ve marinated the meat properly (several hours or preferably overnight), they’re the most juicy wonderful morsels you could possibly eat. Tips for the Best Beef KebabsA few tips that will help ensure your kebabs turn out well:
How to Know When the Kebabs are DoneMost important, keep an eye on them! Do a finger test for doneness, or if the grill is too hot, tap the meat with the end of your tongs to see how much it is giving. The meat and veggies will continue to cook a little once you’ve taken them off the grill and they are resting, so keep that in mind. Marinade Ingredients for Shish KebabsKey to this kebab recipe is marinating the beef chunks. This marinade is a mix of the following:

What to Serve with Beef Kebabs?If you’re making these kebabs for a weeknight dinner, we’d serve them with a simple tossed green salad. If you’re putting together a whole spread for a backyard barbecue, go with the classics: potato salad, macaroni salad, or three bean salad. More Great Skewer & Kebab Recipes:Beef Kebabs RecipeUsing bamboo or wooden skewers instead of metal will help keep the steak from getting overcooked on the inside. Metal transfers heat, so is useful to use for chicken, or a meat that you want to cook all the way through, but not so useful for steak that you want done rare or medium rare. Method1 Marinate the meat: Mix the marinade ingredients together in a bowl and add the meat. Cover and chill in the fridge for at least 30 minutes, preferably several hours or even overnight. (Heck, I've kept the meat marinating for a couple days, still great.) 2 Soak skewers in water: Soak the wood or bamboo skewers in water for at least 30 minutes before grilling. This will help prevent them from completely burning up on the grill. 3 Thread the meat and veggies onto the skewers: Cut the vegetables into chunks roughly the width of the beef pieces. Taking care not to poke yourself, thread the meat and vegetables onto double bamboo skewers. One way to do this safely is to put the piece that you are trying to pierce on a cutting board, and then push the skewers through the piece to the board. Using double skewers will help you turn the kebabs on the grill. If you keep a little space between the pieces, they will grill more evenly. Paint the kebabs with some of the remaining marinade. 3 Grill on high, direct heat: Prepare your grill for high, direct heat. Grill for 8 to 10 minutes, depending on how hot your grill is, and how done you would like your meat, turning occasionally. 4 Let rest: Let the meat rest for 5 minutes before serving.

The Best Wine to Pair with Salmon
https://ift.tt/3eDRim9 If you’re anything like me, salmon is on your plate more often than any other variety of seafood. Whether it’s roasted, seared, or grilled, it makes for an easy and feel-good weeknight meal. But what should you drink with it? The traditional rule of white wine with fish is probably what comes to mind, but salmon is meatier in flavor and texture than other fish like cod and tilapia, which makes it somewhat of an outlier. With that in mind, I think your best bet with salmon is Pinot Noir—and here’s why. WHITE WINE IS NOT THE BEST CHOICE FOR SALMONThe reason white wine is a classic pairing with seafood is that it’s generally lighter-bodied than red wine, so it doesn’t overpower the fish. Also, just like the common practice of squeezing lemon juice over your freshly cooked seafood, higher acidity in white wine tends to compliment it. But pink-hued fillets like salmon, while still relatively mild in flavor, are buttery, rich-tasting, and have a more pronounced “fishiness” than extra-mild fish like tilapia, flounder, or sole. Salmon is also a firmer, meatier fish, with a moist and tender texture, rather than a delicately flaky one. Both of these factors mean salmon can break with tradition and pair with a red wine instead of a white one. PAIR SALMON WITH PINOT NOIR!Since salmon is bolder in flavor and texture, it actually stands up well to red wine! The type of red wine is key, though: A big, heavy-bodied Cabernet Sauvignon will indeed overpower salmon, but a light-bodied red will not. That’s why Pinot Noir is such a perfect fit! It has more acidity than most other red wines to complement the fish and cut through its richness. Plus, its fruity, earthy notes work well with salmon’s buttery, extra-savory flavor. WHAT KINDS OF PINOT NOIR TO PAIR WITH SALMONDo all kinds of Pinor Noir pair well with all kinds of salmon? Yes and no. As a whole, Pinot Noir pairs well with just about every kind of cooked salmon, regardless of the variety or how it’s prepared. It works well with smoked salmon, too—be it hot smoked or cold smoked (aka lox). What’s important to keep in mind, however, is just how wide-ranging bottles of Pinot Noir are, and how certain bottles pair better with certain preparations or types of salmon than others.
Various sauces and spices also play a roll. A cream sauce is better with a lighter-bodied Pinot while a tomato-based sauce is nice with a fuller, more fruit-forward bottle. Similarly, the bolder the spices you sprinkle on your salmon, the more well-suited a bolder Pinot Noir is. At the end of the day, though, there’s no need to get too flustered about picking out the perfect bottle. Pick up a bottle or two at your local wine shop that sparks your interest and just have fun experimenting! Chocolate Lactation Smoothie

As a breastfeeding mama I’m always looking for ways to increase (or maintain) my milk supply. I’ve developed recipes for lactation cookies and lactation bites, which I love. They’re both super tasty and I definitely notice a difference in my supply when I eat them regularly, but there are plenty of days where I’ve run out of the cookies/bites and I need something fast… that’s where this lactation smoothie comes in. Of course, you can literally make any smoothie a lactation smoothie just by adding ingredients to boost your milk supply, but haphazardly adding ingredients to a smoothie can often times result in a concoction that doesn’t taste so good. Especially when you’re working with a bitter ingredient like brewer’s yeast. Been there, done that! This smoothie on the other hand, has three ingredients for boosting your milk supply (oats, brewer’s yeast and flaxseed) and it still tastes delicious. It’s so good, I would happily drink it daily. The combo of banana, chocolate and peanut butter totally masks the bitter taste of the brewer’s yeast and the frozen fruit combined with the oats and flaxseed give the smoothie a thick and creamy texture. Sweetened With Medjool DatesI purposely chose to sweeten this smoothie with medjool dates because I figured many mamas will have a few leftover from endlessly eating dates to help prep for labor. If you don’t have any dates on hand, you can use another natural sweetener like maple syrup or honey. I’d start with 1 teaspoon, taste the smoothie and add more if needed. Foods That Help Increase Milk SupplySince breastfeeding Olivia, I’ve done a bit of research about which foods are best to keep your milk supply up and help with milk production. Here’s a little list of the foods I found:
What is Brewer’s Yeast?Of all the ingredients known to help boost a woman’s milk supply, the most interesting to me is brewer’s yeast. I had to do a little research to figure out exactly what it is, but brewer’s yeast is a fungus and gets its name because it is used in the production of beer and bread. It is packed with vitamins and minerals – most notably, vitamin B, iron, zinc, magnesium and potassium. It’s also a good source of protein. One 1/4 cup serving offers 8 grams of protein. Because of this, brewer’s yeast has been touted as a plant-based superfood. While it has a lot of really great benefits, it’s important to note that you should talk to your doctor before adding brewer’s yeast to your diet as it can interact with a variety of medications. I’ve been making this smoothie for breakfast or lunch. It’s filling enough to have on its own as a meal, but sometimes I’ll pair it with a little something extra like a hard boiled egg. Peach Overnight Oats

It’s overnight oats season! I love all oatmeal seasons but overnight oats have a special place in my heart. My mouth is watering just thinking about these peach pie overnight oats. I only buy peaches in the summer (usually July or August) because I know they just won’t be any good any other season (at least in Richmond). Is there anything better than a fresh, ripe, juicy peach? No, no there isn’t. Ingredients Needed for Peach Pie Overnight Oats
Overnight Oats RatioThe base “recipe” for overnight oats is so simple! The hardest part is getting the right ratio of oats to liquid, but if you follow my recipes you’ll be set! I aim for a 1:1 ratio of rolled oats to milk, plus half as much yogurt. So for 1/2 cup of oats, I use 1/2 cup of milk + 1/4 cup of yogurt (or an additional 1/4 cup of milk). For this recipe, I’m skipping the yogurt and using the extra milk. This seems to give the oats the perfect consistency, not too thick, but not soupy. For the liquid, I usually go for non-dairy milk like almond milk, but you can use whatever milk you have on hand and if you really want to experiment you can try using different liquids like fruit juice. How Long Do Overnight Oats Need to Soak?Given the name, you’d assume overnight oats need to soak overnight, but you can actually make them in 2-4 hours if you’re in a rush. While it does take some time for the oats to absorb the liquid, they don’t necessarily have to be soaked overnight. I recommend at least 8 hours for true overnight oats, but there have been mornings where I decide I want overnight oats for breakfast even though I didn’t prep them the night before. When this happens I’ll make them the morning of and let the oats soak for just 2-4 hours. With this quick soak, they’re not as soft as overnight oats that have soaked longer and they’re a bit more liquidy, but they’re still delicious. Can You Eat Overnight Oats Hot?Short answer, yes! You can definitely warm up overnight oats, but the whole point of overnight oats is to eat them cold like muesli. Even if you think cold oats sound strange, I recommend giving it shot before you write them off. Of course, if you simply can’t do the cold oats you can always heat them up. Just pop the overnights oats in your microwave, cooking in 30 second increments until the oats are warm throughout and enjoy. How Long Do Overnight Oats Stay Fresh?When stored in an airtight container in the fridge overnight oats should last for up to 5 days. They will soften more the longer they sit so I find they’re best on days 1-3, but they’re still safe to eat on days 4 and 5. With this said, overnight oats are great for meal prep. Cherry Cheesecake Overnight Oats

As you know, I’m a full-on oatmeal lover. I love baked oatmeal, but in the summer, I depend on overnight oats! I’ve made so many different versions, but this cherry cheesecake version is extra decadent and legit tastes like cheesecake. Who doesn’t love cheesecake for breakfast? I highly recommend making these oats in the summer when cherries are in season because nothing is better than a fresh cherry! Having said that, I’ve made this countless times with frozen cherries and the oats still turn out delicious! Like all of my overnight oat recipes, this variation is super simple! Add your milk and cream cheese to a mason jar and stir or mash together until the cream cheese is broken up into small chunks. Add the oats, sweetener, chia seeds, vanilla and cherries. Stir everything together and then put the mixture in the fridge overnight and let the oats do their thing! After letting your overnight oats soak overnight (or at least a few hours), take the oats out of the fridge and top crushed graham cracker and cherries. In the morning when you’re ready for the most delicious breakfast, top the oats with crushed graham crackers and extra cherries. My mouth is watering just thinking about this combo! Ingredients Needed for Cherry Cheesecake overnight oats
No Cherries? No Problem!I love this recipe with cherries, but if you don’t love cherries or simply don’t have them on hand you can make this recipe with another fruit like strawberries or blueberries. Or if you really want to get creative you can skip the fruit and add in something more decadent like chocolate chips or peanut butter (or both)! I’ve made (and shared) so many different overnight oat variations, but I’ve been loving this flavor lately. It’s based off my easy overnight oats recipe, but we’re adding peanut butter directly into the overnight oat mixture instead of just using it as a topping. This ensures every bite has a little peanut butter flavor. If you’re a peanut butter lover like me, you’ll know that I pretty much like to drizzle all of my overnight oats with peanut butter (or another nut butter) and I already have several pb inspired overnight oats combos — everything from peanut butter cup overnight oats to peanut butter and jelly overnight oats. All that said, sometimes it’s nice to get back to basics and that’s what this recipe does! Ingredients Needed for Peanut Butter Overnight Oats
Overnight Oats RatioThe base “recipe” for overnight oats is so simple! The hardest part is getting the right ratio of oats to liquid, but if you follow my recipes you’ll be set! I aim for a 1:1 ratio of rolled oats to milk, plus half as much yogurt. So for 1 cup of oats, I use 1 cup of milk + 1/2 cup of yogurt (or an additional 1/2 cup of milk). This seems to give the oats the perfect consistency, not too thick, but not soupy.
