Austin Aries’ lentil macaroni and cashew cheese
http://ift.tt/2uPf0ci If there's one thing we're always on the lookout for, it's a good healthy substitute for man 'n cheese—and this deliciously healthy recipe absolutely fits the bill. Ingredients
3 oz lentil pasta
2 cups raw soaked cashews
1 cup nutritional yeast
Juice of half small lemon
1 tsp yellow mustard
Salt and pepper, to taste
2 cups broccoli
How to make it
Soak cashews overnight in filtered water. Drain and set aside. Steam broccoli until soft. Cook lentil pasta in boiling water and, once soft, drain, saving the hot water. In a Vitamix or food processor, blend soaked cashews, nutritional yeast, lemon juice, mustard, salt and pepper, and 2 tbsp hot pasta water. Add water if needed until sauce is slightly thick but smooth. Pour sauce over cooked noodles, then top with broccoli.
