Happy 4th of July!

Lately, my friend and I have been really loving champagne cocktails for a little extra somethin’ somethin’. They are fun, they are easy and everyone seems to like them! Plus, champagne really does go with everything from sushi to burgers, so I know these will fit right into whatever 4th of July celebrations seem to come your way.

I made these over the weekend — you know, just to make sure they were okay to serve ? — and I plan on packing up all the ingredients to take to a friend’s barbecue. All you need are a few simple ingredients that you most likely already have on hand. If you don’t have champagne on hand you SHOULD. Always. It’s just a good idea.

But like I was saying, you really just need a couple ingredients to make these and they are a real crowd pleaser! Just fresh berries, simple syrup and champagne, of course. Just drop the berries and a splash of syrup into each glass, top with bubbly and cheers. These go down real quick so they have the potential to get you in trouble. While I’m at it, I’ll tell you about the other yummy champagne cocktail I made for my birthday dinner last month! I infused fresh thyme from the garden into the simple syrup! I added a sprig of fresh thyme to everyone’s glasses and they were a BIG hit. So yummy. I would love to try more garden inspired cocktails because they turned out so well.

Red, White and Blue Champagne Cocktails

Course: Drinks

Servings: 6 people

Ingredients

  • 1 bottle sparkling wine we love champagne or prosecco!
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries or strawberries

Instructions

  1. Make the simple syrup by simmering together the sugar and water until the sugar has dissolved. Set aside to cool and chill.

  2. When you're ready to make your cocktails, add a few berries into each glass. Add 1-2 tsp of simple syrup and top glasses with champagne.

  3. Serve immediately and enjoy!
