Finally, the pork!!
You guys have been asking about this pork ever since I first showed it on Instagram Stories a few weeks ago and I’m super excited to finally share it with you today, along with our review of the new AmazonFresh service. As probably everyone knows, we are big fans of pork shoulder in this house. I most always have one in our deep freezer “just in case” (along with bacon, cardamom buns and a few frozen whole chickens). This salsa pulled pork is so delicious and only requires two ingredients and a slow cooker. You guys are going to love it!
The groceries I used to make this meal came from AmazonFresh and I am excited to share with you guys about them today. AmazonFresh is a grocery delivery service that comes in speedy time with super fresh ingredients (hence the name…hah) — I made this order at 9pm on a Sunday night and my groceries were neatly by my door in reusable refrigerated boxes at 6:20am the next morning. That’s hard to beat, in my opinion. Everything was incredibly fresh and made it really easy to throw everything in the slow cooker before I left to drop Grayson off at school.
I also felt good about the prices. This 2.5 lb pork shoulder just cost a little over $10 — and we got a few meals out of this! Incredible.
So, to make this easy peasy weeknight meal, all you need to do is (literally!) dump a jar of salsa over a pork shoulder in your slow cooker. Set the timer for 10 hours on low. Walk away. Breathe in the delicious pulled pork scent all day that will permeate your house. Shred with a fork at dinner time. Pile into corn tortillas. Stuff your face. It’s that easy.
I made this with medium heat salsa and both boys ate it no problem. It really wasn’t spicy at all; it just had very good flavor. I highly recommend this pork for any summer gatherings with friends or just a plain ol’ Taco Tuesday. It also freezes great and *I think* leftovers would go really well mixed into mac and cheese. Just sayin’. ?
