Hey everyone!
I am back for a Whole30 update as we head into our final week of the program (we officially are done on labor day). I don’t feel like I have as much to say this week, as it’s pretty much the same ol’ thang going down over here. To sum it up, week by week, I would say week 1 was very difficult, week 2 was awesome and week 3 was…well, boring.
First of all though, here are some pros I have experienced so far:
We have eaten WAY more veggies!! All sorts! I really feel like the bulk of all our meals have been vegetables and it’s been really great. Before this, I was used to putting a starch on the plate, always, like rice, bread or pasta. When you take that out and fill the spot with more vegetables, you really do feel healthier. I will for sure keep that up.
Not feeling like I HAVE to end each meal with something sweet. I kicked that sugar habit to the curb and feel a lot better for it. Yes, I miss dark chocolate but I don’t feel like I need all the gummies and sweet tea to keep going in the afternoon.
…that really is about it.
Now for the cons:
I feel like this whole program in general is a LOT of meat and it has started to feel like too much. I am seriously missing grains, beans, lentils and pasta. Meat at every single meal has just been a lot. It feels unbalanced to me and if I am being perfectly honest, I feel unbalanced in general because of it. It’s a lot to chew, y’all, and I am someone who really loves meat!
There is no way I can do what the book says and “just eat leftovers for breakfast”. Beef stew at 7am with black coffee? No thanks. That is pretty much the last thing I want right when I wake up. The eggs and sausage got to be too much, too. I started feeling a bit, should I say, greasy after all the bacon and sausage in the morning. So, that being said, for the past week I have pretty much been doing homemade acai bowls every morning and they have been a very welcome and refreshing change!
Truth be told, I don’t even know if this acai bowl is really that compliant. But it’s pretty darn wholesome so I am fine with it! I just have been blending up one frozen acai packet (Trader Joe’s has these now!) with a tiny bit of cashew milk, a banana and a few frozen strawberries. I blend it really, really well in my vitamix, then pour it into a bowl, top with unsweetened coconut and a big glob of almond butter. DELICIOUS. I want to have these for breakfast every day, always.
Meals have been good this week. We made an awesome brick oven roast chicken that we actually plan on remaking tonight because it was so good. We also had some great wild halibut that was incredibly refreshing after, what felt like, too much red meat. My favorite meal, though, would have to be the first photo in this post! I just rolled a pork loin in a spice rub I made with fennel, garlic, rosemary and salt, and then I roasted it for 25 minutes at 375. I made a homemade babaganoush with all the eggplants I received in last week’s CSA box and we also had roast brussels on the side. It was absolutely delicious!
I am really looking forward to baking again and just “woke up” my starter to get it ready for next weekend. Basically what that means is I took it out of the fridge, discarded 80% of it and added 1/4 cup flour and water. Stirred it up and set it on the counter. I’m going to feed it every day next week and bake some pretty epic bread the first day that I can. ?
