Many years ago, when I was a cross-country runner in college on Long Island, our team had a Tuesday tradition: After an especially hard workout, we would go to a place called Big Barry’s in Lake Grove and eat as many buffalo BBQ wings as we possibly could.

Why Tuesday? That was the night when each wing cost only 13 cents.

The Best BBQ Wings of My Life

Now I’ve eaten thousands of Buffalo wings before and since, but none were like Big Barry’s. I swear they had to be either roasted or grilled, because Barry’s wings were crisp and charred and very much not like those nasty, pallid fried things you get in most of the country.

Amazing what a slight difference in cooking method can do for a humble dish.

I loved these BBQ wings. Loved them. So much so that one day, after an unusually tough workout (and not a few beers), I decided to pick up the gauntlet that Barry’s threw down at every customer who walked in the door: Eat enough wings to get your name on the Plaque of Honor, and your whole table eats free. No problemo, I thought.

How Many Grilled Chicken Wings Can you Eat?

Because Barry’s wings were barbecued (or roasted, I was never sure), and they could be ordered with sauce on the side, I had routinely eaten dozens at a sitting. I started with 25 wings, which went down easy. Another few Pabst Blue Ribbons and I was on to my second 25. Again, easy-peasy.

It was the final 25 that got me. Mind you, as a cross country runner I weighed maybe 140 pounds. The last dude who got his name on the plaque was a fireman from Middle Island who was 6’7″ and weighed four bills, easy.

I hit a wall when I got to 60 wings. At the urging of my teammates (screaming, more like, because they didn’t want to pay their bar tab), I managed to choked down another 7 wings before I gave up.

Don’t eat 100 BBQ Wings, but Make Plenty

Did I make it? Not even close, the waitress said, smiling sweetly. “Good try, though, especially since you’re so skinny, but you’d need to eat another 40 wings to get on the board.”

The thought of eating another 40 wings made me want to hurl, so we paid up and left as soon as we could.

This grilled chicken wings recipe is as close to Big Barry’s BBQ wings as I’ve been able to make. They go down real easy, so make more than you think you’ll need. But I’d advise stopping before you hit 100, OK?

Buy whole chicken wings for this recipe: wings with the tip, the flat, and the drumette. Whole wings are cheaper than pre-separated wings, and breaking them down yourself is easy!

How break Down Chicken Wings

Here's how to break down those wings once you're back home:

  1. Wiggle the joint where the wing tip connects to the flat. With a chef's knife or kitchen shears, cut right through the middle of this joint.
  2. Do the same with the joint connecting the flat and the drumette. Cut right down the middle to separate.

This is not a quick-cooking wing recipe; grill these wings low and slow over indirect heat on  your grill. This will take at least an hour -- longer is even better if you can stand to wait!

You might think all this grilling will result in tough, overcooked wings, but never fear. Your reward for all time at the grill meat so tender that it practically falls off the bone, with every bite infused with smoky, spicy flavor.

Pancake cereal is the latest food trend on TikTok and Instagram. For anyone who hasn’t seen it, pancake cereal is tiny pancakes eaten like cereal in a bowl with a spoon. You can use any pancake batter you like, try them with my Whole Wheat Pancake Recipe or make them full size like these Heart-Shaped Chocolate Chip Banana Pancakes.

Why choose between cereal and pancakes when you can have both? If you’re on TikTok you’ve probably seen this trend with the #pancakecereal hashtag receiving millions of views. I’ve been having fun making videos and wasting time on Tiktok during quarantine, if you’re on it make sure you follow me!

Pancake cereal is very versatile. Pretty much however you like your regular-sized pancakes will work with these bite-sized pancakes. You could make tiny whole wheat pancakes or pancakes with mini chocolate chips or sprinkles. Top them with not only the classic syrup and butter combo but also fruit, whipped cream, honey, powdered sugar, chocolate chips, or sprinkles. The options are endless, and anything goes! Some people are really taking the cereal part to heart and even pouring milk over the pancakes.

When I decided to test out this new trend, I wanted to create a lighter version with my pancakes. Adding bananas to the pancake mix is an easy way to add nutrients and fiber, to make them even healthier and topped them with a lot of fruit. Would you hop on the trend? How to Make Pancake Cereal

  1. Making pancake cereal starts like any other pancake recipe – the first step is to make the batter. I put all the ingredients in a blender and pulse until the batter is smooth and thoroughly combined.
  2. Then, you need to put the batter into an empty condiment bottle so you can squeeze out the little pancakes. If you don’t have a bottle, you can just use a zip-locked bag – pour the batter in and then snip the corner of the bag. It will work perfectly for squeezing out the mini pancakes.
  3. Once little bubbles form on the tops of the pancakes, flip them over with a spatula. Flip a couple times until they are a nice light brown color.
  4. When the pancakes are done, put them in a bowl and top with banana and berries and any of your other favorite toppings.

Ingredients

  • 1 cup 1% milk, buttermilk or almond milk
  • 1 cup unbleached all purpose or whole wheat flour
  • 2 medium ripe banana, divided
  • 2 large eggs
  • 1 teaspoon oil
  • 1 teaspoon vanilla
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • cooking spray
  • 1 cup fresh mixed berries, for topping
  • 1 large banana, sliced
  • optional whipped cream and colored sprinkles, for topping

Instructions

  • Add milk, flour, 1 of the bananas, eggs, oil, vanilla, baking powder and salt to a blender and pulse until smooth and throughly mixed.

  • Heat pan to medium high heat and spray with oil.

  • Toss the pancakes with a spatula and cook for a few more minutes.

  • Occasionally toss the pancakes around to help cook more evenly until slightly browned.

  • Transfer to 4 bowls and add sliced bananas, fresh berries and your favorite toppings (I like to drizzle honey).

When my husband and I were in San Francisco a few years back, I spent a Saturday morning walking to the Ferry Building Farmers Market, where I stumbled into a little patisserie shop called Miette.

While my husband was out for a morning run, I was gobbling up delicate and fanciful macarons and the most delicious buttermilk panna cotta with fresh strawberries.

I have a deep affinity for buttermilk, and I personally feel like it’s the most under-appreciated of all dairy products. My morning at Miette reminded me how versatile this tangy, thick milk can be, and how beautifully it pairs with strawberries.

While I would love to eat panna cotta every day, it’s just not realistic, so I set my sights on creating Strawberry Buttermilk Overnight Oats. This slightly sweet, ready-when-you-are cold breakfast is prepared the night before; it’s healthy, and a great way to use up any leftover buttermilk.

A tray is filled with a creamy coffee, the best overnight oats and a pint of strawberries.

WHAT’S THE DIFFERENCE BETWEEN OVERNIGHT OATS AND OATMEAL?

The first difference: Overnight oats are prepared the night before and kept cold in the refrigerator, while oatmeal is usually made on the stovetop the morning you want to eat it, though you can make oatmeal in the slow cooker or pressure cooker as well.

The second difference: Overnight oats are often eaten cold. That’s how I prefer them and how this recipe is intended to be eaten.

If the idea of eating cold oats doesn’t sit well, we have a Hot Overnight Oat Recipe just for you. (I’ll be honest, it took me a bit to love cold oats, but now I can’t imagine my mornings without them, especially as the temperature rises.)

THE BEST OATS FOR OVERNIGHT OATS

I prefer old fashioned oats, also called rolled oats, because I like the texture. They are chewy but firm, and not too soft or mushy. You can use instant or quick cooking oats if that’s what you have on hand, but they could end up mushy. Given that this is a no-cook oatmeal recipe, you really don’t need instant oats.

I would stay away from steel cut oats for this recipe. They won’t absorb the moisture quite as easily as the other varieties, and the texture could be a bit too hard to enjoy.

The best overnight oats topped with strawberries and sliced almonds with a gold spoon. A pint of strawberries is behind it.

BEST RATIO FOR OVERNIGHT OATS

I personally appreciate a recipe that I can commit to memory. That’s why I use this ratio:

  • 1/2 cup buttermilk
  • 1/2 cup oats
  • 1/2 cup yogurt
  • 1/2 cup berries

For some extra flavor, I also often add 1/2 teaspoon vanilla or almond extract and a few teaspoons of honey.

This ratio creates pretty thick overnight oats. You can always increase the liquid by a 1/4 cup if you want it to be a thinner consistency.

HOW TO ADAPT THIS RECIPE?

Overnight oats are easy to adjust to your individual preference. Though most of the ingredients are easy to switch, I would use old fashioned oats whenever possible.

  • Swap buttermilk for oat, soy, almond, or regular dairy milk.
  • Swap plain yogurt for a sweetened variety.
  • Stir in a spoonful of strawberry jam.
  • Use any berry you have on hand—blueberries, raspberries, and even apples make wonderful overnight oats. I’m partial to roasted rhubarb.

MAKE THIS OVERNIGHT OAT RECIPE EVEN EASIER

I added my yogurt and strawberries in the morning, but you can absolutely make this a grab and go breakfast. A pint-sized mason jar is the perfect size for these oats. Add the oats, buttermilk, vanilla extract, yogurt, and honey. Stir to combine. Add the berries and stir again. Your oats will be 100 percent ready to eat in the morning.

I make them in a Ball jar when I know I have to leave my house early in the morning (I’m a late-morning breakfast person), so I can eat around 10 a.m. when I get hungry.

When I’m at home, which is often because I work from home, I just mix the oats and buttermilk in a bowl with the extract. In a separate bowl, I combine the honey and the strawberries. I let them both sit covered in the fridge overnight. In the morning, I top my oats with yogurt and spoon the strawberries over the top.

Scooping a spoonful of the best overnight oats topped with sliced strawberries and almonds. A pint of strawberries, a creamy coffee and a linen are all on the tray along with the overnight oats.

HOW FAR IN ADVANCE CAN YOU MAKE OVERNIGHT OATS?

I typically make overnight oats the night before and eat them the next morning. My husband, on the other hand, will mix up an entire week’s worth on a Sunday night and grab one every morning. Either one will work, but I wouldn’t make them more than five days in advance. Just enough to get you through the work week.

Have you ever tried za’atar? The word actually refers to two things: an herb related to thyme and oregano and a Middle Eastern spice blend. Here, we’ll be focusing on the spice. It’s herby, nutty, tangy, and salty, and it’s a seasoning that you absolutely want to be cooking with.

Though you can find za’atar seasoning at Middle Eastern grocery stores and spice shops, it’s still not widely available in the US. If you can get your hands on a good store bought blend, I encourage you to try it, but you should also make your own. That way, you’ll know all the components are fresh and potent, and you can customize it, choosing the ingredients and the ratios that you like best.

This recipe is my ideal za’atar spice mixture – it has lots of sesame and incorporates fresh herbs in addition to dried spices. I hope you love it as much as I do, but there’s no single right way to make za’atar. If you like yours a little tangier or a little saltier, taste and adjust to create a blend you love.

Za’atar Recipe Ingredients

No two za’atar recipes are the same – the exact ingredients and ratios vary throughout the Middle East and the world. Often, it includes toasted sesame seeds, ground sumac, salt, and dried herbs such as dried oregano, marjoram, thyme, and…za’atar! I keep my recipe simple with these 5 ingredients:

  • Fresh thyme – While za’atar is traditionally made with dried herbs, I love the unique flavor of the fresh thyme here. If you don’t have any on hand, or if you want your spice blend to keep for longer, feel free to use dried thyme in its place.
  • Sesame seeds – They add a slight crunch and a wonderful nuttiness. For a richer flavor, toast your sesame seeds before making za’atar.
  • Sumac – If you’ve never tasted this bright red spice before, you’re in for a treat. Popular in Middle Eastern and Mediterranean cooking, sumac has a tart, lemony flavor that gives this za’atar a delicious sour kick. If you can’t find sumac at your grocery store, look for it in a Middle Eastern market, a spice store, or online.
  • Sea salt – To make the fresh, nutty, and tart flavors pop!
  • Ground cumin – It’s not a traditional za’atar ingredient, but it adds a little extra complexity to this recipe. If you don’t have any on hand, feel free to skip it! The spice blend tastes great with or without it.

Just mix it all together, and enjoy! If you’d like your spice mix finer, crush everything in a mortar and pestle. Made with fresh thyme, it will keep in an airtight container in the fridge for up to 5 days. If you use dried thyme, it will keep at room temperature for up to 1 month.

Za’atar Spice Serving Suggestions

Once you have za’atar on hand, you’ll discover a thousand ways to use it! Throughout the Middle East, it’s commonly dusted over labneh, baked onto flatbreads called man’oushe, and sprinkled over meats and vegetables. Here are a few more ideas to get you started:

  • Stir it into olive oil to make a dip for pita or crusty bread. I love to serve this combination for an easy, flavorful appetizer!
  • Sprinkle it over hummus, baba ganoush, or white bean dip topped with a drizzle of olive oil. Don’t forget the fresh veggies or pita for dipping!
  • Toss it with roasted vegetables like potatoes, fennel, or cauliflower.
  • Use it to dress up grilled vegetable kebabs or grilled zucchini.
  • Sprinkle it over homemade focaccia before it goes in the oven.
  • Toss it with quinoa, couscous, or rice and olive oil for an easy side dish.
  • Sprinkle it over sliced tomatoes or cucumber for a fresh side dish or snack.
  • Dust it onto avocado toast.
  • Use it to punch up simple hard boiled eggs.
  • Toss it with crispy roasted chickpeas for a healthy snack.

7-Day Healthy Meal Plan

I hope everyone is doing well and staying healthy! While we are still practicing social distancing, I know many places are phasing into a “new normal”. Hopefully this means that shopping will prove to be a little easier for us all and therefore I am transitioning back to a seven day plan. Remember though, substitutions can still be made when necessary or needed, and the pantry staples are always good to check and review from time to time.

Why Should Everyone Meal Plan?

Meal planning is a great way to organize your meals for the week ahead. You also save time and money in the supermarket! And of course, planning ahead helps you stick to your goals!

About The Meal Plan

If you’re new to my meal plans, I’ve been sharing these free, 7-day flexible healthy meal plans (you can see my previous meal plans here) that are meant as a guide, with plenty of wiggle room for you to add more food, coffee, beverages, fruits, snacks, dessert, wine, etc or swap recipes out for meals you prefer, you can search for recipes by course in the index. You should aim for around 1500 calories* per day.

There’s also a precise, organized grocery list that will make grocery shopping so much easier and much less stressful. Save you money and time. You’ll dine out less often, waste less food and you’ll have everything you need on hand to help keep you on track.

Breakfast and lunch Monday-Friday, are designed to serve 1 while dinners and all meals on Saturday and Sunday are designed to serve a family of 4. Some recipes make enough leftovers for two nights or lunch the next day. While we truly believe there is no one size fits all meal plan, we did our best to come up with something that appeals to a wide range of individuals. Everything is Weight Watchers friendly, I included the updated WW Blue SP for your convenience, feel free to swap out any recipes you wish or just use this for inspiration!

The grocery list is comprehensive and includes everything you need to make all meals on the plan. I’ve even included brand recommendations of products I love and use often. Cross check your cabinets because many condiments you’ll notice I use often, so you may already have a lot of them.

And last, but certainly not least, this meal plan is flexible and realistic. There’s plenty of wiggle room for cocktails, healthy snacks, dessert and dinner out. Labneh dip

The hardest part of making labneh cheese is waiting. Everything else is simple. Mix together 2 ingredients – Greek yogurt and salt – wrap them in a cheesecloth, and hang it over a bowl to strain. Then, things get tough: you’ll have to wait 24 hours to open the cheesecloth and enjoy the thick, creamy yogurt cheese inside. But if you try this labneh recipe, I think you’ll agree that the wait is totally worth it.

If you’re not familiar with labneh, it’s a soft cheese made by straining yogurt to remove the whey. It has a thick, spreadable texture similar to soft goat cheese or cream cheese, and thanks to its yogurt base, its flavor is rich and tangy. Throughout the Middle East, it’s a common addition to mezze platters, where it’s served as a dip with olive oil and spices, but the uses for it don’t end there. You can dot it onto salads, dollop it onto pizza, slather it onto sandwiches, and more!

How to Make Labneh Cheese

For how delicious labneh is, it’s shockingly easy to make. Here’s what you need to do:

First thing’s first: choose your yogurt wisely. No matter what, look for Greek, whole milk yogurt. Don’t substitute low fat or fat-free yogurt in this recipe. And depending on the thickness of your yogurt, you may want to use two layers of cheesecloth instead of one. If your yogurt is quite thick, one layer works just fine. If it’s thinner, use two layers for the best results.

When you’re ready to make the labneh cheese, stir together the yogurt and salt. Mix them up in a small bowl, and then scrape the mixture into a layer of cheesecloth.

Next, tie the cheesecloth around a wooden spoon. Bring the edges of the cheesecloth together, and knot them around the spoon’s handle. Place the spoon across the top of a deep bowl so that the labneh hangs in the center without touching the bottom of the bowl. Chill for 24 hours, or at least overnight. The longer you strain the yogurt, the thicker your labneh will be.

The next day, your labneh will be ready! Remove it from the cheesecloth and enjoy it right away, or store it in an airtight container in the fridge until you’re ready to eat.

Labneh Serving Suggestions

My favorite way to enjoy labneh is simple. I drizzle it with olive oil, sprinkle it with garnishes like za’atar, everything bagel seasoning, fresh herbs, or lemon zest, and scoop it up with fresh veggies and warm pita bread. Served this way, it makes a fantastic addition to a crudité platter, but Jack and I would happily devour it for a light dinner or lunch too.

You can also use this homemade labneh cheese as you would a soft goat cheese. Here are a few ideas to get you started:

  • Dot it onto a salad, like my Bright Spring Salad or Mediterranean Chickpea Salad.
  • Dollop it onto any homemade pizza, such as the Pizza with Apples, Leeks, and Lemon Zest Labneh on page 183 of Love and Lemons Every Day.
  • Spread it onto crostini, like the Zucchini & Radish Carpaccio Crostini on page 67 of Love and Lemons Every Day.

Alternatively, it would be a great replacement for cream cheese on a homemade bagel topped with vegan carrot lox.

The other day I was craving a turkey sandwich for lunch and decided to make a turkey club. I used Boar’s Head turkey thinly sliced, my favorite turkey from the grocery store deli. It hit the spot! Turkey clubs are great with just some chips and a pickle, but you could also serve it with your favorite side. Here are some options: potato salad, egg salad, tomato salad, corn, tomato, and avocado salad, fruit salad, and tomato soup.

Crispy bacon is the best part of a club. Bacon makes everything better, amiright? One of the easiest ways to cook bacon is in the oven. Put the bacon on a foil- lined baking sheet and bake at 400 degrees for about 20 minutes, flipping over after 10 minutes. Let bacon sit on paper towels for a few minutes to drain the grease.

What is a turkey club sandwich?

A turkey club is a classic sandwich with six ingredients: turkey, bacon, lettuce, tomato, mayonnaise, and bread. It traditionally has a third slice of bread in the middle with extra layers of meat, but I only used two slices to cut calories.

Are turkey clubs healthy?

Turkey clubs can be healthy. Since I only use two slices of bread, I also use less meat and mayo. I prefer using Dave’s Killer Bread Thin-Sliced, which is whole grain and has fewer calories than regular bread. This turkey club sandwich has 351 calories.

Variations:

  • Sub ham, roast beef, or chicken for the turkey.
  • Use multiple types of meat in one sandwich. Turkey and ham is a popular combo.
  • Use a tortilla instead of bread for a turkey club wrap.
  • Swap the bread for a lettuce wrap for a low-carb sandwich.
  • Add mustard to your sandwich.
  • Put cheddar or Swiss cheese on your club.
  • Add avocado for an extra veggie.
