Wardrobes shouldn’t be the only transitional thing in our lives. Meals and ingredients should be transitional as well, if for no other reason than it helps lessen the stress of cooking and baking. For me, I need ingredients that transcend recipes. If an ingredient can transform itself from breakfast to dinner, or from a cocktail to dessert, it’s going to find a permanent place in my kitchen. Staple ingredients relieve the pressure on me to “make it happen” when figuring out what to make for dinner on any given night. This week’s recipes can go from being served with eggs in the morning, to saddling up alongside a starch and veg for dinner later that night. While we truly believe there is no one size fits all meal plan, we did our best to come up with something that appeals to a wide range of individuals. Everything is Weight Watchers friendly, I included the updated WW Blue SP for your convenience, feel free to swap out any recipes you wish or just use this for inspiration! The grocery list is comprehensive and includes everything you need to make all meals on the plan. I’ve even included brand recommendations of products I love and use often. Aperol Spritz
https://ift.tt/2CJk5Il If you haven’t already tried an Aperol Spritz, you’ve probably heard of one. This popular Italian apéritif (pre-dinner drink) is a favorite summertime sipper for many. It’s low in alcohol, easy to drink, and has a zesty deep orange color that calls to mind a sunset on a hot summer night. It’s also incredibly simple to make an Aperol Spritz at home – just Aperol, prosecco (or sparkling wine), and soda water – which means a quick stop at the store and you can enjoy a glass tonight! WHAT IS APEROL?Aperol is an Italian orange liqueur. The recipe is secret, as is the case with many specialty liqueurs, but the brand’s website does say it’s “an infusion of ingredients including oranges, herbs, and roots.” (Don’t give it all away now!) When I taste Aperol on its own, to me it tastes like the syrup version of orange soda, quite sweet but with a bit more bitterness. At 11% ABV (alcohol by volume), Aperol is relatively low in alcohol compared to other liqueurs, which are typically 24% ABV or higher. That’s why Aperol is so popular in spritz form—you can have a big glass before dinner and hardly feel a thing! APEROL VS CAMPARIBoth Aperol and Campari – that other popular Italian liqueur and one of the main ingredients in a Negroni (my favorite drink) – are amari, herbal liqueurs made in Italy. While they share a similar color and flavor profile (both have pronounced orange flavors with both sweet and bitter elements), Aperol is fruitier, sweeter, and more syrupy than Campari. It also has half the alcohol content (11% ABV versus 24% ABV for Campari). One way to think about the difference is to say Aperol is like a session beer and Campari is like an IPA. One is uncomplicated and unlikely to offend; the other is complex with a distinct point of view. SUBSTITUTES FOR APEROLIf you don’t have Aperol, or you can’t find Aperol, or you don’t like Aperol, consider this my invitation to you to embrace the spirit of the Aperol Spritz but with an Aperol-adjacent liqueur. In other words, another Italian amaro! Follow the classic spritz ratio – three parts Prosecco or other sparkling wine, two parts liqueur, and one part soda water – then substitute one of the other amari listed below. Note: You may want to add an ounce or more simple syrup to the above spritz ratio when you use an amaro other than Aperol, just to balance the bitterness. Technically, if you sub in one of these you will be making an Amaro Spritz. Each of these amari has its own unique flavor profiles—experiment and see which one you like best! Mexican Street Corn Salad

Have you ever had Mexican street corn (elote) before? I had it for the first time at Rancho La Puerta and honestly it’s hard to go back to regular ol’ corn on the cob after trying it. It’s SO flavorful and delicious! I can’t get enough… especially when sweet corn is in season during the summer months. What is Mexican Street Corn Salad?Mexican street corn salad (also called esquites) is basically an off-the-cob version of elote. And if you’re unfamiliar, elote is simply grilled sweet corn on the cob that is topped with a mixture of mayo, chili powder and cotija cheese. Esquites follows the same basic recipe but after grilling the corn, you cut the kernels off the cob and toss them with the typical toppings to create a salad/side dish that’s perfect for serving a crowd. Lightened Up Mexican Street Corn SaladTo create a lighter version of traditional Mexican street corn salad I replaced some of the mayo with high-protein Greek yogurt. The flavor is still spot on and I personally like the tiny bit of tang that the yogurt adds. Here are the ingredients you need for this epic salad:
What Kind of Corn to Use?As I mentioned above, there are a few different types of corn you can use for this recipe. Of course the salad is amazing with fresh, sweet corn grilled and cut from the cob, but when I’m in a rush I make it with frozen, fire-roasted corn. It’s still good and comes together so fast. Let’s break down each option and chat through how to prepare each! Fresh corn on the cob – Preheat grill to medium-high heat and husk the ears of corn while it preheats. Brush the corn ears with olive oil and grill for about 2 minutes per side. Remove from the grill and let cool before using a knife to cut the kernels off the cob and into a bowl. Frozen fire roasted corn – If you can’t find fresh, sweet corn, the next best option is frozen fire-roasted corn. To prep, simply put the corn in a colander and run water over the corn until it’s thawed. Drain well before using. If you want to serve the salad warm, you can skip the thawing process and add the corn to a skillet over medium heat and cook until corn is warm. Regular frozen sweet corn – If you can’t find fire-roasted frozen corn, regular frozen corn works too! You don’t need to thaw it, just sauté in a pan with 1 tablespoon of olive oil for about 10-12 minutes or until the corn starts to brown. What is Cotija Cheese?Most of the ingredients in this salad are familiar and easy to find besides the cotija cheese. If you’re unfamiliar, cotija is cheese made from cow’s milk that originated in Mexico. It’s white, firm, dry and slightly salty. When it’s aged longer it becomes sharper and firmer (more similar to parmesan) and when it’s younger it’s moist and crumbly (more similar to feta). You can find it at most speciality grocery stores and at Latino markets. If for some reason you’re unable to get your hands on cotija cheese, you can use either feta or parmesan in this recipe! Either will work just fine. Ways to Serve Mexican Street Corn SaladThis salad is awesome on it’s own as a side salad, but there are a few different ways you can use serve it up!

The first time I tested this recipe, I stood at the counter, eating chip after chip. After the first one, I wondered, “Are they crispy enough?” I needed to have another. “Are they salty enough?” I had to eat just one more. “Do they need more cheese?” My empty baking sheet had the answer. These little guys were perfect just the way they were. Since then, I’ve had this recipe on repeat. In the past, I’ve avoided baked zucchini recipes, choosing to grill zucchini or eat it raw instead. For my taste, baked zucchini usually gets too watery and mushy as it cooks. But here, a Parmesan and panko coating solves everything. It stays nice and crisp as the zucchini bakes, so when the chips come out of the oven, they’re crispy on the outside, tender in the middle, and full of rich Parmesan flavor.
