Fact: The buzz about Y2K was happening 20 years ago! TWENTY YEARS AGO. (Thanks, Summer Miller, for the reminder. Ha!) When she brought it up, I think we all kind of fainted a little and thought How is this even possible?! Yeesh! Now, I’m going to date myself, but I was a junior in high school, so I didn’t fully grasp why everyone was freaking out about because all I cared about was making sure I was dressed to the nines for my New Year’s Eve party. I do remember my dad saying something about it since he works with computers and was nervous about it. Fast forward twenty years, and I’m trying to explain Y2K to my kids. In my mind, I’m giving them this fascinating history lesson and I’m this all-knowing intellectual who actually lived through the turn of the century, but in reality they’re looking at me like I’m a *leetle* bit crazy. Then it hits me… that’s the same way I looked at my Dad when he tried talking to me about it. Huh. Funny how life comes full circle, isn’t it? To me, it seems like it was just yesterday that we were at the farmers market buying veggies to turn into pasta salad and zucchini bread. This year may have raced past us, but we certainly had good moments along the way. In particular, we released our second cookbook. I can’t tell you how much we love seeing readers try recipes from it and from the blog! Before we take on 2020, I wanted to share a few top recipes from the last year. These are recipes you’ve all made and loved, and ones we can’t resist making again and again. I hope they give you some fresh inspiration heading into the New Year. And if you have any 2020 recipe requests, let me know in the comments! Our Top Recipes of 20191. Eggplant Parmesan (pictured above) Layered with crispy baked eggplant slices and homemade marinara sauce, my eggplant Parmesan recipe is lighter than – but just as delicious as – the classic version. We fell head over heels for this easy baked falafel! Loaded with herbs and spices, it’s a flavor powerhouse on its own. But stuffed into a pita with hummus, pickled red onions, and fresh herbs and veggies, it becomes really extraordinary. Top it onto a salad, drizzle it over a bowl, slather it into a sandwich, or serve it as a dip. There’s no limit on the ways to use nutty, bright tahini sauce, especially when these 4 bold recipe variations come into play! On cold nights, I love cozying up with a hot bowl of this easy butternut squash soup! Rosemary, sage, and ginger fill it with warm flavor, and the blended squash makes it lusciously creamy without any nuts or dairy. So many of you have made and loved this soup, and for good reason! The rich, umami broth is swimming with velvety caramelized onions. It’s delicious on its own, but, topped with a slice of cheesy toasted baguette, it becomes totally irresistible. 6. Mediterranean Chickpea Salad There’s so much to love about this easy chickpea salad! We love to make this umami-loaded sushi recipe for a fun date night in. Jack rolls the sushi while I blend up the fresh carrot ginger dipping sauce! Nothing brightens up a gray winter day like this vibrant kale salad! It stars a rainbow of root veggies, creamy avocado, and an electric carrot ginger dressing. Topped with roasted chickpeas and toasted seeds, it’s a fresh, nourishing meal on its own. 11. Linguine with Lemon & Tomatoes When you have great seasonal ingredients, it doesn’t take much to make a delicious meal. This 10-ingredient summer pasta is here to prove it. Roasted tomatoes and lemon, basil, and thyme make it a fantastic jumble of bright, fresh, and savory flavors. This creamy pasta pomodoro is basically everything I want to eat for dinner any night of the week! Rigatoni noodles and a luscious creamy (vegan!) tomato sauce make it super comforting, but, with plenty of sautéed veggies, it’s still healthy and fresh. My favorite part of this chocolate cake isn’t its moist texture or intense, chocolatey flavor. Nope! It’s the chocolate frosting on top. It’s so rich and luscious that you’d never guess that it’s hiding a secret veggie ingredient: sweet potato! I’ve always been team breakfast tacos, but this breakfast burrito was a game changer for me. Scrambled eggs, spicy potatoes, pico de gallo, avocado, and lots of fresh veggies make it hearty, fresh, and flavorful. Ahhh it’s that time of the year isn’t it? If you’re anything like me, you go into hibernation mode and crave warm, cozy food… comfort food all winter long. Making Comfort Food HealthyWhat is comfort food? And what makes it unhealthy/healthy? Comfort food is really anything that brings you comfort! It might be a meal from your childhood or it might be a cultural meal that reminds you of “home.” Typically, comfort food dishes are heavier meals made with meat, cream, cheese, etc. To lighten them up, you can make swaps and switch out a variety of ingredients. The key for all of my upgraded comfort food recipes? They have to taste similar (or better) than the original meal! If they taste too “healthy” they simply won’t satisfy a craving for the classic dish. Easy Ingredient SwapsWhen tweaking recipes to make them a bit healthier, I have an arsenal of go-to swaps. Here are a few that I use often:
Healthy Comfort Food SwapsFor this post, I thought of as many traditional comfort foods as I could and then linked my swap for the healthy version. Did I miss one of your faves? I would love to recreate it! Leave me a comment and I’ll get recipe testing. ? Healthy Comfort Food RecipesBeef Stroganoff – Instead of feeling super heavy and full after a bowl of traditional stroganoff, try my mushroom stroganoff! Instead of egg noodles, a heavy cream sauce and beef, I created a recipe with high protein noodles, a creamy coconut sauce and mushrooms! Spaghetti and Meatballs – If you’re craving spaghetti and meatballs you HAVE to try my popeye turkey meatballs served over zucchini noodles or spaghetti squash with marinara sauce. Prep the meatballs in advance and you have the easiest.dinner.ever. Macaroni & Cheese – Before you run away because there are green things in this mac and cheese… know that you can skip the greens or serve them on the side if you are dealing with a really picky eater! This recipe for healthy mac and cheese is packed with protein and a major upgrade from traditional macaroni. Meatloaf – Did anyone not grow up eating meatloaf? Didn’t think so. This lentil loaf is one of my most popular recipes on EBF and for good reason! It’s packed with flavor and topped with a maple glaze. Mmm! Baked Ziti – All forms of pasta are considered comfort food in my book. Instead of making traditional baked ziti, try this turkey cauliflower baked ziti! It’s just as good as the traditional version but low-carb, gluten-free and packed with vegetables! Burger and Fries – You’re going to have to trust me on this one: tempeh burgers paired with sweet potato fries, zucchini fries, butternut squash fries, turnip fries or jicama fries. So many fry options! The vegan burger holds together super well and is delicious straight off the grill. Tuna Noodle Casserole – Who else grew up on tuna noodle casserole? I took a fun spin on this classic recipe by making spaghetti squash tuna noodle casserole boats. Gluten-free, dairy-free, low-carb and paleo! Pizza – This eggplant pizza uses sliced eggplant instead of a carb-heavy breaded crust. Tons of flavor and super simple to assemble, this recipe is gluten-free, vegetarian and vegan-friendly. Lasagna – Low carb, healthy lasagna made with zucchini noodles and tofu. Do I have your attention? This vegetarian zucchini lasagna is packed with protein and loaded with Italian flavor! Broccoli Cheese Casserole – This version of cheesy broccoli casserole has protein-packed quinoa instead of instant rice, freshly grated cheddar cheese and a homemade sauce instead of canned soup. Mashed Potatoes – Swap cauliflower for potatoes in my mashed cauliflower. You’ll save half the calories and 1/3 of the carbs! #worthit Tacos – Try this fun take on tacos… taco zucchini boats! Instead of being served on tortillas, they’re served in zucchini boats. There’s no dairy but shhh no one will notice with all of the flavor packed into this meal! Another option when you’re craving tacos? My turkey taco salad or tempeh taco salad. Both options are so yummy! Enchiladas – This sweet potato enchilada bake is my go-to meal for anyone I’m cooking for. New baby, surgery, you name it! You’re getting this bake. It’s a fan favorite and the perfect swap for traditional enchiladas! Fried Rice – If fried rice isn’t on your comfort food list, who are you?! Just kidding… but I love fried rice! Try this upgraded cauliflower fried rice or my signature quinoa fried rice the next time you’re craving an Asian meal. Shrimp and Grits – Pair cauliflower grits with blackened shrimp to make a lightened up, low-carb version of the classic Southern recipe. The result = delicious flavor and extra veggies! Baked Goods – Baked goods will forever be one of my go-to comfort foods! I love these peanut butter oatmeal cookies and these flourless black bean brownies. Both are fan favorites… no one will know they’re healthy! Ice Cream – Raise your hand if you love a nightly bowl of ice cream! {We all raise our hands.} Well lucky for you, I’ve got TWO upgraded options for you – mint chocolate chip made from avocados and chocolate ice cream made from bananas. So no matter what you celebrate, I hope you celebrate surrounded by family and loved ones, as they are the true presents!
WW has changed their plan to now include a Blue, Purple and Green Plan. All the recipes on my blog are updated for the Blue plan. I’ve been updating all my recipes (over 2000) and have completed 2019 with the other two colors, and I am working my way down so please be patient.
Why Should Everyone Meal Plan?
Meal planning is a great way to organize your meals for the week ahead. You also save time and money in the supermarket! And of course, planning ahead helps you stick to your goals!
About The Meal Plan
If you’re new to my meal plans, I’ve been sharing these free, 7-day flexible healthy meal plans (you can see my previous meal plans here) that are meant as a guide, with plenty of wiggle room for you to add more food, coffee, beverages, fruits, snacks, dessert, wine, etc or swap recipes out for meals you prefer, you can search for recipes by course in the index. You should aim for around 1500 calories* per day.
There’s also a precise, organized grocery list that will make grocery shopping so much easier and much less stressful. Save you money and time. You’ll dine out less often, waste less food and you’ll have everything you need on hand to help keep you on track.

THE DETAILS:
Breakfast and lunch Monday-Friday, are designed to serve 1 while dinners and all meals on Saturday and Sunday are designed to serve a family of 4. Some recipes make enough leftovers for two nights or lunch the next day. While we truly believe there is no one size fits all meal plan, we did our best to come up with something that appeals to a wide range of individuals. Everything is Weight Watchers friendly, I included the updated WW Blue SP for your convenience, feel free to swap out any recipes you wish or just use this for inspiration!
The grocery list is comprehensive and includes everything you need to make all meals on the plan. I’ve even included brand recommendations of products I love and use often. Cross check your cabinets because many condiments you’ll notice I use often, so you may already have a lot of them.
And last, but certainly not least, this meal plan is flexible and realistic. There’s plenty of wiggle room for cocktails, healthy snacks, dessert and dinner out. And if necessary, you can move some things around to make it work with your schedule. Please let me know if you’re using these plans, this will help me decide if I should continue sharing them!
