WW has changed their plan to now include a Blue, Purple and Green Plan. All the recipes on my blog are updated for the Blue plan. I’ve been updating all my recipes (over 2000) and have completed 2019 with the other two colors, and I am working my way down so please be patient. Why Should Everyone Meal Plan?Meal planning is a great way to organize your meals for the week ahead. You also save time and money in the supermarket! And of course, planning ahead helps you stick to your goals! About The Meal PlanIf you’re new to my meal plans, I’ve been sharing these free, 7-day flexible healthy meal plans (you can see my previous meal plans here) that are meant as a guide, with plenty of wiggle room for you to add more food, coffee, beverages, fruits, snacks, dessert, wine, etc or swap recipes out for meals you prefer, you can search for recipes by course in the index. You should aim for around 1500 calories* per day. There’s also a precise, organized grocery list that will make grocery shopping so much easier and much less stressful. Save you money and time. You’ll dine out less often, waste less food and you’ll have everything you need on hand to help keep you on track. THE DETAILS:Breakfast and lunch Monday-Friday, are designed to serve 1 while dinners and all meals on Saturday and Sunday are designed to serve a family of 4. Some recipes make enough leftovers for two nights or lunch the next day. While we truly believe there is no one size fits all meal plan, we did our best to come up with something that appeals to a wide range of individuals. Everything is Weight Watchers friendly, I included the updated WW Blue SP for your convenience, feel free to swap out any recipes you wish or just use this for inspiration! The grocery list is comprehensive and includes everything you need to make all meals on the plan. I’ve even included brand recommendations of products I love and use often. Cross check your cabinets because many condiments you’ll notice I use often, so you may already have a lot of them. And last, but certainly not least, this meal plan is flexible and realistic. There’s plenty of wiggle room for cocktails, healthy snacks, dessert and dinner out. And if necessary, you can move some things around to make it work with your schedule. The Friday Buzz: Clevr Chai Tea, Cooking with Wool, and the Best Caramels Ever
https://ift.tt/38Cj92E Welcome to The Friday Buzz, our roundup of all good things, good advice, and good feelings. It’s the happy hour of blog posts! Up this week we are sharing our favorites including (but not limited to) Clevr Chai Tea, Cooking with Wool, and Snowshoe & Co! The sickies have hit the Cash household, and they’ve hit hard. Blergh. It started the week before Christmas, and has slowly taken us down one-by-one and has managed to get 7 out of 8 of us. I’ve learned to fight hard, though. Real tough. Mama Cash does NOT have time to be sick! So I stock up on my Vitamin C, Zinc, and Echinacea and drink my special concoction twice daily that’s made up of the following: 2 tablespoons apple cider vinegar, 2 tablespoons lemon juice, 2 tablespoons honey mixed into 8 oz water and heated to desired hotness. (I know, such technical terms.) Once it has been heated, add a sprinkling of cinnamon and sip slowly. Or try and sip it down as fast as possible, because it’s not the best tasting, but dang it! Every time I drink it, I think there’s no way this’ll help anything, but it most certainly does! It does the job. It may not cure me completely (one can be hopeful, right?) but it does help me get better quickly. Earl Gray Tea and Tonic
https://ift.tt/2GwBh2d No-ABV (alcohol by volume) cocktails – or “mocktails,” as we often call them – are basically cocktails minus the booze. The challenge of making a memorable one is finding ingredients that can substitute for the complexity of flavor that alcohol provides. While coffee has recently gained popularity as a mocktail element (see the ubiquitous Coffee and Tonic), tea is also an excellent way to create aromatic, caffeine-boosted libations! Earl Grey shares similar flavors with tonic water to make for a nice citrusy pairing, so it’s a useful addition to your home bar when you’re not drinking alcohol. WHY TEA IS GREAT FOR MOCKTAILSWhen one is abstaining from alcohol-based bitters and liqueurs, tea can add that necessary touch of bitterness and astringency to a non-alcoholic drink. It is also another way to add layers of flavor: steeping tea bags directly in syrup eliminates the need to add more liquid into your mocktail, which can dilute your drink further. THE TRICK TO A GOOD MOCKTAILSomething else to keep in mind when making a mocktail is viscosity. Alcohol has a certain weight in a drink and on your tongue. When you drink, say, a fruit juice, you know you are drinking a juice. But if you made a juice/spirit mix, while the flavor would obviously tell you it’s alcoholic, there is also a tangible difference in the way it feels in your mouth. To replicate that experience to some degree in this mocktail, I created a rich tea syrup for a heavier mouthfeel. Giving body to the drink elevates it and makes it feel more like a cocktail and not just a simple sweetened beverage. DO NOT UNDER-STEEP YOUR TEA SYRUP!We are all used to the recommended brew times for tea, usually clocking in at four to five minutes. However, here you’re looking for concentrated flavors. A short steep time will result in a weaker flavored syrup. Don’t worry – the longer steep time won’t make the drink too bitter. If you have loose tea, use two to three tablespoons of tea, depending on how strongly flavored your tea is. If you’ve picked up a new-to-you tea, start with two bags, and if you’d like more flavor, steep a third bag. THE BEST TONIC WATER TO USE FOR A TEA AND TONICThere are so many tonic waters on the market right now that choosing one might seem difficult. Any basic tonic would work and still strike the right sweet and bitter notes due to the quinine. For this drink in particular, though, I find that Fever-Tree’s Indian Tonic, with its bitter orange flavor, really complements the bergamot. Avoid the more powerfully flavored tonic waters, which can compete with the assertive citrus and floral notes of bergamot. SUBSTITUTIONSIf Earl Gray is not a flavor you enjoy (or like my husband, it brings on a migraine), many other floral or herbal teas could work. Hibiscus, lemon verbena, or a rooibos tea would bring a complementary flavor and work with the tonic. You could also switch out the lemon here for lime or grapefruit. STORING YOUR EARL GREY SYRUPKeep this syrup in an airtight container in the fridge and it will last you at least a month. If you have leftover syrup, you can use it to glaze tea cakes or donut holes, or to sweeten a rice pudding. Homemade Taquitos
https://ift.tt/2GjI4My Who would have guessed that moving to Chicago would have made me a taquitos fan? Just after Jack and I moved here, a new bar opened up down the block from our house. At first, we went there for drinks, but we’ve kept going back for taquitos! As it turns out, this bar has an inventive chef who comes up with a rotating menu of homemade taquitos. They make their tortillas from scratch and stuff them with seasonal, local ingredients. After just a few visits, Jack and I were total taquitos converts, and I knew I had to try making my own! The results: Baked Green Chile Taquitos! Unlike the taquitos from down the street, these little guys are baked, not fried, and I use store bought tortillas, so making them is quick and easy. Still, they’re totally delicious. Baking the taquitos makes them lighter than fried ones, and they come out of the oven perfectly crispy and golden brown. Their crunchy shell gives way to a creamy, bold filling made of refried beans, melty cheese, and spiced green chile jackfruit. This is a great recipe to serve as a party appetizer (hint, hint Super Bowl/Oscars fans!), but we’ve also been known to eat them for dinner with a side of cilantro lime rice. Homemade Taquitos Recipe IngredientsHere’s what you’ll need to make these DELICIOUS homemade taquitos:
And of course, you can’t go wrong by serving them with cilantro, guacamole, pico de gallo, and sour cream or yogurt. I wouldn’t say no to tomatillo salsa for dipping either! How to Make TaquitosThis taquitos recipe is SUPER fun and easy to make! Here’s how I do it: First, shred the jackfruit. Open your can of jackfruit, drain it, and break apart the fruit, discarding any tough core pieces. Pull apart the tender, flaky jackfruit until it has the texture of shredded chicken. Then, bake it! I roast the jackfruit in the oven to infuse it with flavor before I roll it up inside the taquitos. Spread it on a parchment-lined baking sheet and toss it with the drained green chiles and spices. Bake at 400 until the jackfruit is lightly golden brown, about 15 minutes.
Next, stuff and roll the taquitos. Spread a thin line of refried beans all the way down a tortilla, close to the left edge. Top it with a bit of the jackfruit, scallions, and cheese, and tightly roll the tortilla over the fillings. When you finish rolling each tortilla, place it seamed side down on a parchment-lined baking sheet. Finally, bake! Spray the taquitos generously with cooking spray, and transfer the baking sheet to the oven. Bake until the taquitos become golden brown and nice and crispy around the edges. What is Jackfruit?
https://ift.tt/2NObFBB Who would have thought that jackfruit – a sweet, funny-looking tropical fruit – would become a trendy meat substitute? Lately, I’ve been seeing it on more and more restaurant menus, and I’ve been using it more and more in my kitchen. It’s fantastic in everything from dips to tacos to sandwiches and more, and it’s good for you, too! The unripe jackfruit that I use in my recipes is high in fiber and low in calories, and its meaty texture makes it really fun to eat. If you’ve never to cooked with it, I heartily recommend that you try a jackfruit recipe! Read on to learn more about this funky fruit and how to transform it into delicious plant-based meals. What is Jackfruit?Jackfruit is a tropical fruit that grows in South and Southeast Asia. In fact, it’s the largest tree fruit in the world – one fruit can reach 100 pounds! Fresh raw jackfruit has spiky green skin and sweet flesh with a flavor akin to mango. In other parts of the world, the ripe fruit is eaten raw or added to ice cream and baked goods. But around here, fresh jackfruit isn’t widely available in grocery stores. When I use it in recipes, I seek out canned green jackfruit. Look for it in Asian markets or in the canned section of your grocery store – I find mine at Trader Joe’s! While ripe jackfruit tastes super sweet, the young jackfruit that comes in cans is nearly flavorless. Consequently, it’s a great blank canvas for seasoning and adding to savory dishes. What’s more, when you pull apart the unripe fruit, it takes on a stringy texture similar to shredded meat. Given its mild flavor and meaty texture, it’s a perfect plant-based meat substitute in stir fries, tacos, and more! How to Use JackfruitWhen you open a can of jackfruit, you’ll find wedges of the fruit in brine. First, drain the fruit, rinse it, and pat it dry. Then, shred it! Each wedge of fruit will likely have a tough core piece at its tip. Pinch off and discard these tough pieces, and then use your hands to gently pull apart the soft fruit until it has the texture of shredded meat. Last but not least, season it up! On its own, the canned fruit is bland, so I always cook mine with bold seasonings before I serve it. Here are a few of my favorite jackfruit recipes: Baked Green Chile Taquitos (coming tomorrow!) I bake jackfruit with cumin, coriander, cayenne, and green chiles before rolling it into crispy baked taquitos! The seasoned fruit adds delicious tangy/spicy flavor and moist, meaty texture to this recipe. This taco recipe, from The Vegan Instant Pot Cookbook, is one of my favorites for entertaining! The richly spiced vegan taco “meat” keeps well in the fridge for up to three days, so feel free to prep it ahead of time. When you’re ready to eat, just reheat it! Then, load it into tortillas with a scoop of fresh mango salsa. My plant-based riff on a pulled pork sandwich! Caramelized onions and a smoky chipotle BBQ sauce infuse the hearty fruit with flavor. Finish the sandwiches with crunchy pickle chips and slaw to take them over the top! Like the vegan tacos above, this recipe is perfect for parties. Enjoy!
