Apple Samoas with Date Caramel
https://ift.tt/3cN2mMD
I’ve got such a fun recipe to share with you today! Inspired by my “famous” homemade samoas recipe with an even healthier take: apple samoas. This is the perfect recipe to get the kids involved in if you want an adventure in the kitchen. Are you feeling inspired in the kitchen? I’ve been going in waves… feeling completely overwhelmed with how much time I’m spending in the kitchen between cooking and dishes while also feeling super inspired to create new recipes that work for our circumstances right now. Lots of pantry staple recipes, of course. But what I’ve really been inspired by lately are healthy recipes that are super simple. So simple that I almost feel silly sharing them, but they are so tasty there’s no way I can keep them from you! Which brings me to these apple samoas. Ridiculously simple (basically just piling yummy ingredients on each other), but the combination of crunchy apple with date caramel, toasted coconut and chocolate is crazy delicious. I obviously had to share this fun creation! Let’s dive in… 5 Simple Ingredients:
Easy Apple Samoas AssemblyIf you haven’t made it already, you’ll start by making the date caramel. This sauce is ridiculously tasty and the recipe makes quite a bit because you need the volume in order for your blender or food processor to blend the sauce. That said, you’ll have leftovers (yay!) to use however you like. You can use it as a dip for apples or as a topping for salted caramel oatmeal or in my samoa baked oatmeal! If you have kids around the house that want to help you make these, here are some tips:
For making the hole in the center of the apple. I like using a melon baller, but you can also use an apple corer or even a spoon. Use a knife or spatula to spread date caramel onto each apple circle. Have your kids sprinkle the toasted coconut on top of the caramel. Lastly melt the chocolate chips and coconut oil in a small bowl in the microwave. Drizzle the chocolate mixture across the coconut and voila! Snack is served. Here are More Simple Snacks You Might Enjoy:

Paloma Cocktail
https://ift.tt/3ay1UjM When Jack and I lived in Austin, we’d always order paloma cocktails on summer afternoons at Hula Hut. It had a big deck right on Lake Austin, and it was filled with people all summer long. We loved to sit there in the hot sun, sipping our cocktails and sitting shoulder-to-shoulder with friends. Last weekend, the spring sun inspired us to make this paloma recipe at home. With just the two of us, our “scene” looked a bit different than our Hula Hut days, but we still had fun mixing up our drinks together. In fact, we’re already looking forward to making this paloma recipe again tomorrow. It’s really simple, and it’s a fresh alternative to other tequila drinks (looking at you, margarita). If you’re looking for a fun way to kick off the weekend, I hope you give it a try! Paloma Cocktail IngredientsA traditional paloma cocktail consists of tequila, lime juice, and grapefruit soda. My recipe is a fresher version of this classic combination. Here’s what’s in it:
Rub the rim of a highball glass or margarita glass with a grapefruit wedge, and dip it in a small plate of salt. Add the tequila, grapefruit juice, sparkling water, lime juice, and sweetener to the glass, stir to combine, and add ice to fill the glass. Sweeten to taste, and garnish with a grapefruit or lime wedge. Enjoy! Find the full recipe with measurements below. Paloma Recipe Tips
