When we first met, he wouldn’t come near a beet, let alone taste one. But with time (and only a little trickery), I’ve gotten him to try and enjoy a host of beet recipes. Just last week, he devoured an entire beet salad at dinner, proclaiming how much he loved it with every bite. So if you’re still on the fence about beets, I get it. Their earthy flavor can be an acquired taste. But I hope you won’t give up on them just yet. They’re especially sweet in the fall, and a good seasoning only makes them better. To get you started, I’m sharing 15 of my best beet recipes below. They include fun snacks, fresh salads, and hearty entrees as well as beet basics like roasted beets and sautéed beet greens. Sautéed Beet Greens
https://ift.tt/31wWy6N Just look at those beautiful beet greens! So often, vegetable stems, stalks, and tops like beet greens are written off as scraps and tossed in the trash. But why? Radish greens pulse into a beautiful pesto, carrot tops create a zesty chimichurri, and cauliflower cores blend into ultra-creamy soups and sauces. We might not eat these parts of vegetables every day, but they’re certainly not scraps. So let’s talk beet greens! They have a mild, sweet, and earthy flavor, and they take on a delicate, silky texture when cooked. Honestly, I think they’re just as tasty as beets themselves. Try them once, and you won’t toss them again. Below, you’ll find my favorite sautéed beet greens recipe. I cook the leafy greens until they’re just wilted and serve them with lemon juice, walnuts, and golden raisins for extra texture and depth of flavor. It’s a stunningly simple side dish, quick enough for a weeknight, but elevated enough for special occasions, too. How to Cook Beet GreensYou’ve clipped the beet leaves off the beets, and you’ve washed and dried them. It looks like you’re ready to cook! My favorite method for how to cook beet greens is to sauté them. Here’s how I do it: Start by removing the leaves from the stems. Then, finely chop the stems and tear or chop the leaves into bite-sized pieces. While you’re at it, go ahead and mince a clove of garlic too. Then, cook! Heat a splash of olive oil in a large skillet over medium heat. Add the garlic and chopped stems and cook, stirring, for 1 minute. Next, toss in the greens, season with salt and pepper, and sauté, tossing, until wilted. That’s it! Your beet greens are ready to eat. Sautéed Beet Greens Serving SuggestionsOn their own, sautéed beet greens are a delicious side dish. I like to dress them up with a big squeeze of lemon, golden raisins, and toasted walnuts. The raisins bring out the greens’ sweetness, and the walnuts add a delicious crunch. If you’ve been reading the blog for any length of time, you know that I like to squeeze lemon on just about everything, but it really adds a nice bright pop of flavor here. Don’t skip it! This sautéed beets greens recipe would be a great addition to any fall or winter meal. Pair it with your favorite protein, pasta recipe, or soup, or serve it as part of a holiday dinner alongside classic dishes like sweet potato casserole, green bean casserole, mashed potatoes, and, of course, roasted beets. 5 Ways to Add Some Spooky to Your Halloween-at-Home

TRICK-OR-TREAT INSIDEWe won’t be going door-to-door this year, so I’m bringing trick-or-treating inside. We’ll be having a “candy hunt,” which is similar to an Easter egg hunt—but with candy, and in our costumes, of course! To have a candy hunt, hide candy throughout the house (or stick to one room, if you’d like) and let your little goblins loose. After all the candy has been found, place some fun little items in paper bags that say “Trick-or-Treat” on them, and then make your kids do some tricks for these extra special treats. Have each child choose one bag, which is filled with things like nail polish, fun earrings, and glow-in-the-dark glasses (like stocking stuffers, but for Halloween!), then place a list of some “tricks” your kids have to do in order to keep the treat. Some trick examples are:
MARSHMALLOW WEB CUPCAKESInstead of asking for treats this year, how about baking some treats for your neighbors? It’s like reverse trick-or-treating! We have some older neighbors who really love seeing the kids all dressed up, so we plan to bake some chocolate cupcakes for them and do a reverse trick-or-treat. As a test run, I made a batch of these chocolate cupcakes, but decided to go wild and crazy and decorate them with some marshmallow webbing. To decorate the cupcakes, simply frost them however you want to, then melt about 1/4 cup of mini marshmallows for 15-20 seconds at a time. Stir with a fork and dip your fingers into the marshmallows. Stretch the melted marshmallows out and wrap around the frosting of the cupcake. The messier, the better. And if you’re starting to wonder how we find the time, sometimes I wonder the same thing! Roasted Pumpkin Seeds

After sharing how to make your own pumpkin puree, I figured I would also share how to roast pumpkin seeds! If you usually toss out your pumpkin seeds while carving or cooking pumpkins, you’re missing out. Roasted pumpkin seeds are delicious, nutritious and fun to make. Pumpkin Seeds vs PepitasPumpkin seeds are often called pepitas. I always thought that pepitas were hulled pumpkin seeds, but upon research I’ve found that the two are different seeds. A pepita is harvested from specific pumpkins that produce hull-less seeds… the tasty green seeds are called pepitas! Whereas pumpkin seeds are harvested from pumpkins that produce the white seeds with hulls… the type of seeds most of us are used to finding when carving pumpkins. When using pepitas and pumpkin seeds as a topping on something like soup or salad, either can be used interchangeably. If the seeds are being used in a specific recipe, I recommend following whatever the recipe calls for! For instance if you’re making a dip or sauce that calls for pepitas, pumpkin seeds won’t work well because the hull is quite hard! A good rule of thumb is that pepitas can always be a substitute for pumpkin seeds, but pumpkin seeds can’t always be used in place of pepitas. Pumpkin Seed NutritionPumpkin seeds are small, but mighty! They’re packed with fiber and healthy fats. They’re also a great source of antioxidants and other nutrients like iron, zinc and magnesium. Zinc helps to support our immune systems and magnesium is known as the “stress relief mineral”… basically two nutrients we could all use right about now! What You Need to Roast Pumpkin Seeds
How to Roast Pumpkin SeedsSeparate seeds – Right after you’ve scooped out the seeds from the pumpkin, separate the seeds from the stringy, fibery pumpkin innards. Put the pulp and seeds into a large bowl of water and work the seeds away from the pulp with your fingers. Drain the water and place the seeds on paper towels or a clean dish towel to try. Season seeds – When the pumpkin seeds are dry, toss in olive oil and salt until all of the seeds are coated. Bake – Line a baking sheet with parchment paper and transfer seeds onto the baking sheet. Roast the pumpkin seeds at 300ºF for 45 minutes or until golden brown, stirring occasionally. How to Store Roasted Pumpkin SeedsWe eat these really quickly so we usually store them on our countertop because they don’t last long. Store in an airtight container on your countertop for a couple days. If you want to store them longer than a few days, store in the refrigerator for up to 1 week and in the freezer for up to 3 months. 9 Recipes to Use Up Leftover Pumpkin Purée
https://ift.tt/37nPH37 My youngest son loves pumpkin muffins so I have a can or two of pumpkin purée in the pantry at all times. Yet, even when I double the recipe, I often have some purée leftover. It ends up stashed, and, sadly, forgotten in the back of the fridge. I know I can’t be the only one with this problem, but I have a solution and few recipes to help you use up what remains of a partially used can of pumpkin. Besides using leftover pumpkin for Pumpkin Cookies, it’s also delicious stirred into oatmeal, whisked along with milk and spices for a Pumpkin Spice Latte, or added to smoothies. If you must freeze it, pumpkin purée lasts 5-7 days in the refrigerator and three months in the freezer. Freeze leftovers in containers labeled with the date. For smaller amounts, freeze the puree in ice cube trays and then transfer to a ziplock once frozen. I’m keeping a list of recipes that I can turn to when I have extra pumpkin to use. I picked recipes that the whole family enjoys, and store well, so that I can have pumpkin-flavored treats whenever the mood strikes. When I cook with canned beans, I almost always start by draining and rinsing them. But in this black bean soup recipe, I pour the canned bean liquid into the pot right along with the beans themselves. This liquid, coupled with the fact that I puree half the soup after it simmers, creates a super creamy and flavorful broth. It’s smoky, spicy, earthy, and bright. Sauté the onion in a large pot over medium heat. Stir in the garlic and spices and cook, stirring constantly, until aromatic.
