Spiced Mulled Wine

This one is simmered with ginger and brandy for a little extra oomph. Photography Credit: Nancy Mitchell Mulled wine is one of my favorite things about winter. No matter how cold or dreary it is outside, a cup of hot spiced wine is guaranteed to warm your body and your spirit. It’s also super easy to make, and you can even make it ahead for a party; just put all the ingredients in a pot and start warming them a few minutes before guests arrive. (Bonus: It will make your house smell amazing.) Want an even more hands-off approach? You can also make mulled wine in a slow cooker! THE HISTORY OF MULLED WINEHumans have been drinking heated, spiced wine for a long time, at least since Roman times. (According to Vinepair, the Greeks did it, too.) This persisted throughout the Middle Ages, because, as you may learn when you make it, heating and adding spices to wine is a great way to make not-great wine taste really good. Hot spiced wine is a holiday tradition throughout the world. In Germany it’s known as Glühwein, and in the Nordic countries as Glögg. WHAT KIND OF WINE IS BEST FOR MULLED WINE?An inexpensive big, rich red – like a Cabernet or a Malbec – is a good choice for mulled wine. This is definitely NOT the time to pull out a really nice wine; in fact, I usually make mulled wine with the lowest priced bottle I can find because the spices and the orange mask the nuances of a more expensive wine. You can even use the Charles Shaw brand of wine from Trader Joe’s (colloquially known as Two-Buck Chuck) or boxed wine for this; just make note of how many bottles are in the box and adjust proportions accordingly. WHAT SPICES ARE BEST FOR MULLED WINE?I like cinnamon and clove for their warmth and flavor, and ginger adds a little zip. (Try it, if you don’t believe me.) This mulled wine is sharp and spicy, enough to warm you up, wake you up, and then relax you again. ADDING BRANDY OR LIQUEURS TO MULLED WINEBrandy, a spirit made from distilled wine, adds extra oomph to mulled wine, which is why I include it here. However, you could add a little Applejack, pear brandy, or pear liqueur instead. (Apples and pears play very nicely with spices, and also with wine.) MORE WINTER DRINKS TO ENJOY:Spiced Mulled Wine RecipeThe key to mulled wine is to warm the wine without boiling it, which would cook off the alcohol. When your kitchen smells so achingly good that you're dying to try a cup of this masterpiece, you'll know it's done. Ingredients
Special equipment:Method1 Stud the cloves into the orange, then cut the orange: Push the cloves into the orange (see this picture for reference), then cut the orange into half circles. (Studding the cloves into the orange means you won't have to worry about floating cloves in your drink.) Alternatively, cut the orange into half circles and add it and the cloves to the wine separately. 2 Add ingredients to the pot: Add all the ingredients to a pot or a slow cooker. 3 Heat the wine: On the stovetop, simmer the wine for 20–25 minutes over medium-low heat, stirring occasionally to mix ingredients and dissolve sugar. If you're using a slow cooker, heat the wine on low heat for 1 1/2 hours or on high for 45 minutes, until warm. Focaccia with Rosemary
https://ift.tt/34aCvKn Nine times out of ten, if we’re making bread at home, we’re making focaccia. When Jack first started baking bread, he made lots of rustic ciabatta loaves. The ingredients were simple, and the bread came out delicious, but it required hours of rising and kneading. So when we discovered how easy it is to make really good focaccia bread at home, we didn’t look back. Since then, this focaccia recipe has become our go-to. It comes together in just 2 hours, rising time included, and the bread is rich and savory, with a yummy chewy texture. Because rosemary and focaccia are a classic combination (and because fresh herbs make everything better, if you ask me), I sprinkle it generously with rosemary. Then, I dot it with roasted garlic to add complex, nutty flavor and finish it off with flaky sea salt and red pepper flakes. Flecked with red and green, this focaccia bread would be the perfect simple, yet impressive, holiday side dish. But luckily, it’s easy enough to make even when you’re not cooking for a special occasion. I hope you love it as much as much as we do! How to Make Focaccia BreadIf you’re new to bread baking, don’t let focaccia intimidate you! In fact, it’s a lot like making homemade pizza dough. Here’s what you’ll need:
The hardest part of this recipe is waiting for the dough to rise! Once it does, brush a large rimmed baking sheet with olive oil and firmly press the dough to its edges. Don’t be shy here! If the dough tears, patch it together and continue pressing out from the center. You’re going to poke holes in it on purpose later, so any holes at this stage aren’t a big deal. Once you’ve pressed the dough to the edges of the pan, flip it over and press it to the edges again. Use your fingers to dot it with indentations, every few inches apart. Then, cover it with plastic wrap, and let it rise again! When the focaccia has doubled in size, scatter on the rosemary, roasted garlic, and flaky sea salt, and bake until it’s golden brown! 5 Easy Tips for Setting a Gorgeous Thanksgiving Table
https://ift.tt/338BQIe Thanksgiving is a week away, and the countdown to one of the best feasts of the year is on! You’re probably all set with the food plan, but have you thought about your table setting? A beautiful table is part of what makes Thanksgiving so special. If the thought of decorating a holiday table overwhelms you (because Thanksgiving dinner is already quite the event to coordinate!), I’m here to tell you to K.I.S.S. or KEEP IT SIMPLE, SUNSHINE! I have 5 easy tips that will help you put together a beautiful table that is simple, budget-friendly, and still leaves room for all the food! TIP #1 – USE A TABLE RUNNER OR COVERINGI have two go-to table runners that I keep on hand for any occasion. One is a black and white checked table runner and the other is simple brown butcher paper. I use the checked table runner not only at Thanksgiving, but also Christmas, Halloween, even Valentine’s Day! Since it has classic black and white colors, all I need is a pop of color to tie it into whatever holiday I’m celebrating. My second table runner of choice is butcher paper. I keep a roll on hand to wrap gifts in and for my kids to color on, but it also makes for a great table covering! Added bonus: If you want something fun to do with the kids, they love to sit down at the table and color on the butcher paper! TIP #2 – CREATE A CENTERPIECE WITH FLOWERS, FRUIT, OR ITEMS FROM YOUR HOMEOnce you’ve chosen your table runner or covering, it’s time to create a simple centerpiece. My favorite centerpieces are made from things I’ve gathered from around my home – think apples, oranges, cranberries, leaves, sticks, pinecones, herbs, and pumpkins! Flowers are always a winner; if you’re at the grocery store shopping for all your food, just swing by the floral department. They have a wonderful variety of flowers and foliage that won’t break the bank. I particularly love baby’s breath. If you’re using fruit, place them in the center of the table in a basket or beautiful bowl with some leaves from outside. If you’re using herbs or sticks, put them in a mason jar or even a glass cup. Don’t overthink it! Keep it simple and pick what inspires you. For my centerpiece, I first added some small oranges to the basket then added a couple pumpkins on top. Once the basket was filled, I placed the larger white pumpkins on the table around the basket and then filled the space with the smaller pumpkins. My rule of thumb is to work in odd numbers, so on each side of the basket you’ll see three pumpkins each. The oranges act as fillers, and I place them in the gaps. Finally, I placed the leaves and baby’s breath randomly in the arrangement. The thing with arrangements like this is they don’t have to be perfect! When it’s imperfect, it gives it a more organic look! TIP #3 – ADD A LITTLE HEIGHTOnce you have your centerpiece set, vary the height of the items by placing them on cutting boards or plates. It’s a great way to add dimension and variety to your tablescape. (And when I say height, I really mean just a little bit, or you won’t be able to see the people across from you!) I have several cutting boards, and the one I use most for this purpose is my Boos cutting board. I have used it as the base for many centerpieces. (It’s also a great board to put your side dishes on!) TIP #4 – CONSIDER YOUR NAPKINSIf I’m using the butcher paper on the table, I like to use napkins with color or with a pattern. I tie a knot at the top and set it on top of the plate. Easy-peasy. If I’m using a patterned table runner, I keep the napkins simple and pattern-free. I place paper napkins under the silverware or on the plate on a diagonal. Be careful not to mix too many patterns on the table! My formula for success is:
TIP #5 – MAKE THE PLACE SETTINGS SPECIALInstead of assigning seats, I like to place a simple notecard on each plate with a word or phrase. I chose “Gather” because that is what I love most about Thanksgiving: I am gathering my closest friends and family together in a celebration of gratitude. Other phrases you might use are: Blessings, Gratitude, Give Thanks, Harvest Blessings, or Grateful Hearts. You can also add a small token to each place setting, which is a lovely way to spiff things up. It doesn’t have to be complicated. Remember all the things we gathered in Tip #1? Use those same items to adorn each plate. Feel free to match all the place settings, or if you’re going for a more informal vibe, place something different on each table! BONUS TIP – DON’T STRESS!Seriously. Don’t worry about making every little thing absolutely perfect. What will make things special are the people gathered around the table! How To Use an Air Fryer: A First-Timer’s Guide

Everybody’s talking about these things, and now you get to see what the big deal is for yourself. How do they work? Is it really frying? What kinds of foods can you make in your new air fryer? Here’s everything you need to know about a basic basket-type air fryer. WHAT’S THE BIG DEAL WITH AIR FRYERS?First off, a disappointment: air fryers are not deep fryers. Air fryers are full of hot air, and that’s what is great about them. They are basically small, powerful ovens, and ovens use air as a vehicle for heat, whereas deep frying uses fat as the vehicle for heat. Because air fryers are ovens and not fryers, foods that come out of your air fryer will not be 100% identical to the onion rings at Cone-n-Shake or the calamari rings at your favorite bar and grill. The upshot is that air fryers are much less messy and oil-intensive than deep-frying. Even better, these lil’ ovens can do much more than crank out faux fried food. Air fryers bring beautifully browned vegetables, crackly-skinned chicken wings, and even light and airy cakes all within your reach. THE DIFFERENT TYPES OF AIR FRYERSThe most common type of air fryer on the market – the basket-type air fryer – looks like a funky coffee maker with a removable basket in its belly. This air fryer has one function only: air frying. This guide covers the basket-type kind of air fryers. You can also find boxy multi-function air fryers on the market, like the Beville Smart-Oven, the Cuisinart Air Fryer Toaster Oven, and the June Oven. These look like toaster ovens on steroids, and air frying is only one of the things they do (among slow cooking, dehydrating, and toasting). They also hold more food than basket-type air fryers. If you have a multi-function countertop oven with an air fryer setting, this guide still has some tips that will be useful for you, so don’t give up yet! HOW AIR FRYERS WORKYour air fryer is like an amazing convection oven. It’s small, yet mighty, and you can roast, broil, or bake in it. You cannot deep fry in it. Need a refresher on convection cooking? No problem. Heat rises, so in a regular oven the top rack is always the hottest spot, which leads to uneven doneness. (It’s also why a lot of cookie recipes tell you to rotate baking sheets from top to bottom and back to front midway through baking.) In a convection oven, however, fans blow hot air around so the temperature is equalized throughout the oven. Air fryers aren’t exactly like convection ovens; their airflow is designed to more closely replicate the heat distribution of deep-frying in hot fat. But for our purposes, the convection oven analogy is good enough. WHAT TO EXPECT THE FIRST TIME YOU USE AN AIR FRYERAfter you open the box, take apart all removable components. This will probably include a removable basket and a grate or perforated tray in the bottom of that basket. Wash and dry them. Put the air fryer on a heat-resistant surface, and at least eight inches away from the wall. Replace the grate and basket. NOTE: Some manufacturers recommend running the air fryer empty for ten minutes before you actually cook with it, to let it off-gas. There might be a slightly chemical smell (one manual referred to it as a “new appliance smell”), so have the vents on or windows open. It should be just a one-time thing. Now you are ready to cook food! How about fries? Really, isn’t that the big sell on these things? Potatoes are cheap, and we have a great recipe for you. IMPORTANT TIPS TO KEEP IN MIND WHEN YOU USE AN AIR FRYER
WHAT SIZE AIR FRYER DO YOU NEED?
Here’s the rub: you cannot fit a lot of food in basket-type air fryers. You and your air fryer will have a much better relationship if you accept this. An air fryer with a 1.75- to 3-quart capacity is best suited for preparing meals for one or two people. Don’t expect leftovers, either. Even a large air fryer (about 4 to 5 quarts) often needs to run food in batches. If a recipe serves more than two people, you’ll likely need to cook it in more than one batch. Consumer Reports found that the actual capacity of some air fryers was a tad smaller than what manufacturers claimed. This can seem like a drag, but remember, air fryers cook food fast. TO PREHEAT OR NOT TO PREHEAT?That is the question. Unlike the big oven on your range, an air fryer does not need a whole half hour to get to temp. A few minutes of preheating should do it. Some air fryer models have a light that indicates when the unit is preheated. Manufacturers recommend preheating, but if you like, you can skip preheating altogether. If you’re starting food in a cold air fryer, your cook time might be three or four minutes longer – no big whoop! Try it both ways and see what gives you the best result. It might depend on the recipe. DON’T MAKE THESE 10 AIR FRYER MISTAKESDoing any of the following things won’t melt your face off, but try to avoid them.
HOW TO CLEAN YOUR AIR FRYERIt’s important to clean your air fryer after every use since a build-up of oil can make the unit smoke. In some instances, you can simply wipe off the drawer and grate with a paper towel. If they’re gunky, hand wash. Most models have parts that are dishwasher safe, so check with your manual. THE BEST FOODS TO COOK IN AN AIR FRYERAir fryers use dry heat, so think of foods that cook with dry heat (roasting, baking, and frying) as opposed to ones that cook with wet heat (boiling, braising, and steaming). Crispy shallots, frozen puff pastry “donuts,” dehydrated tomato slices, puzzlingly low-carb bagels, reheated leftover pizza…don’t be afraid to experiment. That said, we’ve noticed some foods really excel in an air fryer. Drum roll, please:
